The techinque, freshness and excitement for the love of food can be experienced at FIG & OLIVE - a place where people unite under the common thread of great food."</i> <br><br> - Laurent Halasz, Founder <br><br> Roger Vergé learned to love the art of cookery in his family s kitchen in Commentry, France,watching his Aunt Celestine prepare Sunday dinners. He learned to help, and learned to discriminate tastes. Training at the Tour d Argent and the Plaza Athenée, among the finest restaurants in France, he went off to North Africa, then Kenya, developing his ability to astound guests with wonderful flavors. Back in France, he worked at Hôtel de Paris in Monaco and, in the  60s, Le Club in Cavalière, which became one of the celebrations of the Côte d Azur. In this golden region Roger Vergé s Cuisine du Soleil-  cuisine of the sun  was born. Here he updated French cuisine and passed along his knowledge to other chefs. Standing at the epicenter of the modern French culinary list of  begats, Vergé s ways of concentrating and accenting the fresh flavors of the region begat a whole generation  and subsequent generation  of fine French chefs. <br><br> In Mougins, epicenter for Vergé s influence, he opened Moulin de Mougins, then the simpler l Amandier. And then his school, L Ecole du Moulin, over l Amandier. With Paul Bocuse and Gaston Lenôtre, supernovas in the French culinary universe, he created a French restaurant complex at Epcot Center in Orlando, Florida. And for those who can t come to his table, he has developed a selection of condiments, Cuisine du Soleil products, for international distribution. <br><br> But Vergé s accomplishments do not stop there. In Mougins he renovated an old olive oil warehouse to create La Cave de Moulin, his wine cellar, with over 5000 wines, Ports, whiskies, brandies, and objects relating to wine and alcohol. His books include Cuisine of the Sun, Entertaining in the French Style, Roger Verge s Vegetables in the French Style, New Entertaining in the French Style, and Les Fruits de mon Moulin, later released in English. <br><br> Roger Vergé is a Chevalier of the Legion of Honor, a Chevalier of arts and letters, and has received the Chevalier du Merite agricole. He holds the title Maître Cuisinier de France, Meilleur Ouvrier de France, holds a Gold Medal and is a member of the Academie Culinaire de France, and is Doctor of Culinary Arts, Honoris Causa, at Johnson & Wales University, Florida. Vergé  there should be an accent mark over the final e, but unfortunately it does not reliably  translate - across the internet  is spoken of with both affection and reverence by fellow chefs.
